Fruit bromelain (Ana c 2) is a protein found in the fruit of the pineapple plant that can hydrolize proteins and has broad specificity for peptide bonds. It is similar to the papain enzyme found in papaya, and like papain, fruit bromelain is frequently used in the pharmaceutical and food industries (as a meat tenderizer and separately as a clarifying agent in brewing beer) and also in diagnostic laboratories. Fruit bromelain is also an allergen that is predictive for pineapple allergy in humans. All of LSBio's fruit bromelain products are intended for research use only.
